Pumpkin Gingerbread Trifle
* Old Gingerbread or cookies
* 1-oz vanilla pudding
* 6 oz of can pumpkin pie filling
* 1/12 cup packed brown sugar
* 1/6 teaspoon ground cardamom or cinnamon
* frozen whipped topping or vanilla ice cream
Make homemade gingerbread or ginger man cookies, when it starts to get tough, crumble up the cookies into a rough powder/chunk. Or cut up gingerbread into small square pieces. In the meantime add the vanilla pudding, pumpkin pie filling, brown sugar, and cinnamon in a bowl and mix. Add cookies or bread to a glass, next layer add the pumpkin pudding mixture, and then add ice cream if you are going to serve immediately, or whipped topping if you wish to chill it a few days. The filling will rehydrate the old bread and you get to eat your wonderful work all over again.
