Growing Tea Tea plants are grown in hedges or in square checker-board patterns. They are plucked as often as once a week or as infrequently as every 40 days, depending on the climate and type of tea. For find teas, only the top leaf or ‘pekoe tip’ and the second leaf or ‘orange pekoe’ are taken. For coarser blends, the pekoe, souchong* and congou** leaves are also harvested.

Making Tea Black Tea Plucked leaves are allowed to wither for 12 to 24 hours, making them soft and pliable. The leaves are them spindled (releasing juices responsible for the taste) and placed on clean surfaces for 2 to 4 hours (where they are fermented or ‘oxidized’). The leaves are then dried for 6 to 8 hours by being placed in baskets over charcoal fires. Oolong Tea After a quick withering (8 to 10 hours) the leaved are placed in pans and heated (around 250 degrees) which interrupts the fermentation process. They are then rolled and placed in baskets over charcoal fires Green Tea Leaves are first sterilized over steam of fire (to stop the fermentation process), then rolled and dried over charcoal fire (about 200 degrees).

Tea Recipes Chai Tea 1 quart of milk ½ teaspoon of cardamom 1 teaspoon of cinnamon 1 teaspoon of ground almonds 10 teaspoons of brown sugar or honey 8 teaspoons of black tea ~ Combine the cinnamon, cardamom, almonds and milk in a sauce pan. Simmer for ½ hour, stirring occasionally. Just before removal, add brown sugar or honey. ~ Boil a quart of water and pour into teapot with 8 teaspoons of black tea. ~ Steep for 5 minutes. ~ Add prepared milk mixture to tea in a ratio of 1:1. Aerate by pouring mixture back and forth between two containers 5 or 6 times. Strain and serve. Dr. Zhivago Tea 6 teaspoons of good black tea 1 pinch of cloves 1-1/2 pints of freshly boiled water 3 teaspoons of run (optional) ~ Place tea and cloves in small pot. ~ Add 1 cup of boiling water and let stand for 5 minutes. ~ Pour tea into cups and fill glass with additional boiling water. (More tea means a more potent taste) ~ Add a splash of rum if desired.
