December's Bakeoff: Yummy Cakes!

Okay, here's the deal. Now until Dec 31st you have open to bake your cake for the December Bakeoff. It can be a pretty cake, a fancy cake, an ugly cake, or even cupcakes. It can even be 'sorta cakelike' to qualify. The only distinguishing feature is that we need to be able to recognize it as yummy. Frosting and decoration does not count as yummy in consideration for some of our more 'decorating or frosting challenged' bakeoff regulars. Extra points are given for excess, especially in terms of chocolate, and you have to make us drool to get the award.

So have fun and enjoy yourselves! As always, picture evidence required.

The Cake Is Not A Lie: Double Chocolate Gooey Butter Cake

So, I figured I'd better get this done this weekend, because honestly? I'm not going to have time for the rest of the month.

And, furthermore, because I decided I wanted this cake the hell out of my house rather than being tempted into eating it. And eating it. And eating it. And eating it.

So, because I was going to drop it off at my mother's, I figured I'd better make something they'd be sure to like... so I dipped into Paula Deen's book of goodness... because my mother has this hero-worship thing of Paula Deen... and decided on making her Double Chocolate Gooey Butter Cake. This cake is epic, and I highly, highly recommend it. I haven't had any of the actual baked final product yet, but I have this horribly bad habit of eating batter, raw eggs and all, and it took a lot of willpower not to run into a corner with a spatula and the cream cheese and just eat that.

Without further ado... proof that the Cake Is Not A Lie:

And here is the recipe, from PaulaDeen.com:

Double Chocolate Gooey Butter Cake:

1 (16-ounce) box powdered sugar
3 to 4 tablespoon cocoa powder
1 egg, plus 2 eggs
1 (8-ounce) package cream cheese, softened
1 (18.25 ounce) package chocolate cake mix
Butter, for greasing pan, plus 16 tablespoons (2 sticks) butter, melted
1 teaspoon vanilla extract
1 cup chopped nuts
Directions

Preheat oven to 350 degrees F.

Lightly grease a 13 by 9-inch baking pan. In a large bowl, combine the cake mix, 1 egg, and 8 tablespoons (1 stick) melted butter, and stir until well blended. Pat mixture into prepared pan and set aside. In a stand mixer, or with a hand mixer, beat the cream cheese until smooth. Add the remaining 2 eggs, and the cocoa powder. Lower the speed of the mixer, and add the powdered sugar. Continue beating until ingredients are well mixed. Slowly add the remaining 8 tablespoons (1 stick) of melted butter, and the vanilla, continuing to beat the mixture until smooth. Stir in nuts with a rubber spatula. Spread filling over cake mixture in pan.

Bake for 40 to 50 minutes. Be careful not to overcook the cake; the center should still be a little gooey when finished baking. Let cake partially cool on a wire rack before cutting into pieces.

CAYENNE'S NOTES:

1. I substituted the Duncan Hines boxed mix with my from-scratch recipe, below. Whisk it all together and continue on. It'll do the trick.

2 cups of all-purpose flour
2 cups of sugar
¾ cup cocoa
2 tsp. baking soda
1 tsp. salt


2. I baked the cake for 40 minutes. That was perfect.

3. I used walnuts for the nuts. :)

I decided to be impressive and creative, and make this really involved cake. I regretted it. This thing took me more than 4 hours to make and assemble. If you decide to attempt it, I strongly suggest more than one stand mixer or hand mixer, as well as several bowls. You will be making a lot of batters that need to be folded into each other, as well as a ton of meringue.

Molten Center Chocolate Cake


I am planning on making another cake on Sunday, but this is the first of my December Bake-athon creations. Enjoy. I did.

The Recipe :
Molten Center Chocolate Cake
5oz 60% bittersweet cacao chocolate
10tsp unsalted butter, cut into 10 pieces
3 large eggs
3 egg yolks
2/3 cup of sugar
½ all-purpose flour
7 ramekins/molds

1. Set rack in middle of oven, preheat to 400F
2. Half fill sauce pan of water, boil. Turn off heat and combine chocolate and butter in a heat proof bowl, place over heated water and stir until melted
3. Whisk eggs and egg yolks together by hand. Whisk in sugar and then butter/chocolate mixture. Mix with mixer on medium speed for 1 minute. Whisk in flour by hand
4. Fill molds to within ¼ inch of the top, bake 10-12 minutes.


Also, for fun....Better late than never, GINGIES! (AND! Cream Cheese Brownies. Yum!)

Not a cake with a lot of chocolate (duh!) but with alcohol and cream^^. Forgot to make some pics from the cooking process, but it is an easy enough cake to make regardless. Tried to translate the receipt, but got some weird numbers in the process, like 0.85 cups, also because I tried to round as little as possible... hope this still works.

Glühwein-Kirschkuchen (Wine Punch Cherry Cake)

receipt :
For the dough:
EU US Ingredient
4 4 Eggs
250g 8.8 oz Sugar
200ml 0.85 cups Oil
200ml 0.85 cups Wine punch – self made or ready made, doesn't really matter. (If self made, let it cool before useage though.)
100g 3.5 oz Chocolate rasps
1 tsp 1 tsp Cinnamon (grounded)
1 Tbsp 1 Tbsp cocoa
300g 10.6 oz All purpose flour
1 package 1 package Backing powder – not sure if you get those in so little packages in the US, else it is around 2tsp.


For the coating:
EU US Ingredient
740g 26oz Cherries from the glass (that's 2 glasses over here)
3 Tbsp 3 Tbsp Sugar
400ml 1.7 cups Hot wine punch
3 packages 3 packages Gelatine (one package has 9g/0.3oz over here)
400g 14oz Cream
3 tsp 3 tsp Vanilla sugar
2 tsp 2tsp Whipping cream stiffener
200g 0.85oz Sour Cream
2 Tbsp 2Tbsp Chocolate rasps
- - Butter for the backing tin


  1. Preheat oven to 200°C/390F and lightly grease the baking tin. Batter eggs with Sugar until you receive a thick cream, add oil and wine punch. Mix in chocolate rasps, cinnamon, cacao, flour and baking powder. Spread out the dough on the backing tin and bake it for 20-25 Minutes at 180°C/360F with air circulation. Let rest until cold.
  2. Let the cherries drip dry, but keep the juice. Measure 350ml(1.5 cups) from the juice and make a glaze from the cherry juice, the sugar, wine punch and gelatine. Add cherries and apply it on the cooled cake. Let cherry layer stiffen.
  3. Whisk cream, vanilla sugar and cream stiffener and once done mix it with the sour cream. Add on top of the cherry layer and decorate with chocolate rasps.

It is also called mulled wine. My dictionary suggested a couple of terms for the german word Glühwein, but I wasn't quite able to make out which one is most commonly used.

It is basically heated wine with a couple of spices (Cinnamon, staranise, clove, lemon zest,...)

Other terms my dictionary suggested:
  • glogg
  • glühwein
  • wassail
  • mulled claret
  • mulled wine
  • hot wine punch

I figured Punch might be known, so I assumed hot wine punch might be the best word so use... apparently not. Is mulled wine more common?

I had absolutely no cake mix to work with so I made an angel food cake. Or is it an Ethaefal cake? Bad pun...

The recipe is just angel food cake mix and water. The frosting is melted hershey bars and chocolate chips.

I made this on a whim because I had no clue if it would work. My family loved it though so I guess I have myself a new recipe to make :D

I made this from a mix- it was the trader joe's gingerbread one. Made it into a cake, but it came out god awful, hence the wrap, the thing is really too sticky to pick up directly. Added extra cinnamon, and everything, and it even came out smaller than usual. Needless to say, this attempt at a baked good did not go over very well. EPIC FAILURE.
Not taking on threads until further notice.
