Mizahar's Sunday Bake-off: Cookie Edition!

Alright ya'll, get ready to be amazed!!! Here is a special reciepe that is the property of my aunt, so I have to credit her. Mind you her designign is a lot better than mine, but she has specialty decorating tools I borrowed. These are the picks of the famous "Marshall Bug and Butterfly Garden." i know my butterflies look stupid, but that's the best I could do. They are supposed to be monarchs, one of my favorite butterflies.

You are absoluetly right, my campus won't let me cook. I went home and to my Aunt's house and "borrowed" her decorating tool. I was getting antsy from not having a decent home cooked meal (and the fact it was my brothers birthday), so I made the 2 hour trip home. While I was there, I decided to enter the bake off.

Okay, so I was originally going to make Oatmeal cookies, as it's all I had ingredients for, but then I noticed that I also had peanut butter and added it to my mix and decided on Oatmeal Peanut Butter Cookies. So first, the recipe and prep:

Ingredients

1/4 cup shortening
1/4 cup margarine, softened
1/2 cup packed brown sugar
1/4 cup and 2 tablespoons white sugar
1/2 cup peanut butter
1 eggs
3/4 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup quick-cooking oats

Directions

1. Preheat oven to 350 degrees F (175 degrees C).

2. In a large bowl, cream together shortening, margarine, brown sugar, white sugar, and peanut butter until smooth. Beat in the eggs one at a time until well blended. Combine the flour, baking soda, and salt; stir into the creamed mixture. Mix in the oats until just combined. Drop by teaspoonfuls onto ungreased cookie sheets.

3. Bake for 10 to 15 (for a softer batch, cut down baking time to about 8 minutes, which what I did) minutes in the preheated oven, or until just light brown. Don't over-bake. Cool and store in an airtight container. The amount should bake between 24 - 32 cookies.

Soooooo...I finally got around to making my cookies. I found a basic recipe online- one that didn't really tell me much. So I fiddled around with it today, and got this:

They are Cala Lily cookies filled with apricot preserves. They aren't really very sweet, but they sort of remind me of biscuits with powdered sugar and jelly. And anything that reminds me of biscuits is okay in my book. I decided to go with this type in honor of my Konti and her gnosis, though I'm sure Avalis' marks are much prettier and less tasty than my cookies!

Ingredients:
powdered sugar
2 tbl spoons sugar
1/4 cup milk
1 cup heated margarine
2 cups flour (plus a LOT for keeping it from sticking)
4 and 1/2 oz cream cheese
Whatever preserves or jelly you like


Recipe: (Preheat oven to 375 degrees F)
1.) Mix cream cheese, flour, sugar, margarine, and milk together in a large bowl.
2.) Roll out until thin.
3.) Cut out 2inch circles.
4.) Repeat steps 2 and 3 until there isn't any more dough.
5.) Cover cookie sheet with flour (or non-stick spray).
6.) Place as many circles on sheet as will fit.

Note: You'll have lots of leftover dough circles, so you can make a lot more than I did. I just got lazy after the first batch and am saving the rest in my refridgerator for another day.

7.) Fill the circles with preserves, as much or little as you like.
8.) Fold edges over and press together lightly to look like lily.
9.) Brush tops with margarine.
10.) Put in oven for 10-15 minutes, check regularly. When edges are golden and preserves are bubbling, you're done!
11.) After cooling, sprinkle with powdered sugar.
